Sometimes you need a quick fix. Sometimes you don’t want to turn on the oven or get your Kitchenaid mixer going. Sometimes you don’t want to let your fridge-cold butter come to room temperature. Sometimes… baking is not the only way to dessert.
There are so many desserts popping up these days that don’t require the use of a stove or an oven. Just mix, set up, and serve. And as a special second blogiversary treat, the dessert I have for you today is just that simple.
Chocolate Chip Cookie Dough Bites are a delectable morsel of goodness. And by goodness, I mean they are every bit as delicious as they are good for you! Comprised on two different nut flours, some almond milk, coconut sugar (just 1/4 c!), and coconut oil, these bites are healthy and vegan, too!
There is just 1/4 c of all purpose flour, making the dough easy to shape and lending to that addicting cookie dough taste. Add a little vanilla and a pinch of salt along with a sprinkling of vegan chocolate chips and you’re good to go. A quick, healthy dessert in a pinch!
They can be had plain, but once I had tried these bites with a thin layer of chocolate on top, I never looked back. The chocolate makes these bites a bit fancy and quite sophisticated – an ideal 2nd blogiversary recipe for you all to enjoy!

Chocolate Chip Cookie Dough Bites

(Yield: 20 – 25 balls or one 9×4 loaf pan-sized block)
2 T coconut oil, melted
2 T almond milk or another dairy-free milk
1/4 c coconut palm sugar or brown sugar
2 t pure vanilla extract
1/4 t salt
1/2 c all-purpose flour
3/4 c almond flour
3/4 c cashew flour
1/4 c vegan chocolate chips (such as Enjoy Life Semi-Sweet Chocolate Chips)
In a small bowl, whisk together the coconut oil, almond milk, and vanilla extract.
In your food processor, mix the sugar, coconut oil mixture, and salt. Then add all the flours and pulse until evenly combined. Fold in the chocolate chips.
Roll the dough into balls or flatten into a standard loaf pan.
In the microwave, melt together 1/4 c chocolate chips with 1 t coconut oil. Stir until well combined, then dip your chocolate chip cookie dough balls into the chocolate to coat. Let this set in the refrigerator for at least 15 minutes. Serve.
If you are making the cookie dough slab, pour and spread evenly the melted chocolate atop the cookie dough. Let this set in the refrigerator for at least 15 minutes. Cut into squares and serve.
