I know it’s been a long while since my last post, but life, as I’m sure you well know, can be unpredictable and take you on quite a roller coaster ride, as it has done for me the past few months.
But I’m happy to report that I am back and more excited than ever to share even more recipes for delicious, lip-smacking treats especially as we are headed into the holiday season!
There’s no better way to start than with a basic Fall recipe that is a must for your spice cabinets… Pumpkin Pie Spice. Warm spices, cozy and full of robust flavors, combine to make this spice blend that flatters pumpkin-flavored dishes and desserts so well.
It’s so easy to throw together, that it really doesn’t make much sense to purchase the prepackaged stuff from your grocery store, that’s been sitting on the shelf for who knows how long. Plus, you can customize this spice to whatever flavors tickle your fancy.
The basic spices found in Pumpkin Pie Spice are cinnamon, nutmeg, ginger, and cloves. But there are backup spices that lend nicely to this blend as well, such as mace, allspice, and even cardamom.
Below, is a basic recipe for Pumpkin Pie Spice. Remember that a freshly ground spice has so much more flavor than pre-ground, so if at all possible, grind the ingredients yourself before combining them. Feel free to adjust it as necessary to your own tastes. I, personally, love adding cardamom to my Pumpkin Pie Spice as it adds a lovely floral note to the warm spiciness of the blend.
Add this to pies, cookies, cakes, breads,.. even brew your coffee with a little bit of this spice in the morning or any time of day for a lovely Autumn pick-me-up. In the weeks to follow, I’ll be showcasing this spice in many of my recipes. Keep an eye out… Fall has arrived!
Pumpkin Pie Spice
Yield: about 1/4 cup*
2 T cinnamon, freshly ground (if possible)
1 T ginger
1 T nutmeg, freshly ground (if possible)
1/2 t – 1 t cloves, freshly ground, if possible (amount will depend on how strong a clove flavor you prefer)
1/2 t mace, optional, freshly ground (if possible)
1/2 t – 1 t allspice, optional, freshly ground (if possible)
1 t cardamom, optional, freshly ground (if possible)
Place all ground spices into a bowl and whisk thoroughly to combine. Using a funnel (if necessary), pour contents into an airtight jar and use whenever Pumpkin Spice is called for in a recipe.
*In these pictures, my blend consisted of cinnamon, ginger, nutmeg, and 1/2 t cloves. It’s a great basic starting recipe. Taste it and add additional spices as and if you like. The smell is intoxicating!!
